Why You’ll Love These Greek Chicken Quinoa Bowls

I’ve always liked Greek food but going to Greece in 2018 allowed me to gain an entirely new appreciation for Mediterranean cuisine. With the fresh ingredients, salty feta cheese, and tender chicken, there’s just so much flavor happening in every dish…and these Greek chicken quinoa bowls don’t disappoint!

In addition to being delicious and flavorful, it’s also a healthy meal that you can feel good about. It’s packed with protein and fiber – two nutrients that keep blood sugar levels more stable and will keep you feeling full for a while too. Plus, there’s an abundance of antioxidants such as vitamin C, anthocyanins, and quercetin.  

These Greek chicken bowls also make for great leftovers, so they’re a great option to prepare on meal prep days to enjoy the next day…or all week for lunch! You could also marinate the chicken on the weekend then use it to make this meal as an easy dinner on busy weeknights.

Ingredients You’ll Need

This Greek chicken quinoa bowl recipe uses fresh ingredients that you can easily find in your local grocery store. Here’s what you’ll need. 

For the Greek chicken:

  • Fresh lemon juice – I used one lemon and this lemon squeezer, which is a game changer for juicing citrus fruits like lemons and limes! 

  • Extra virgin olive oil – olive oil is a staple in Mediterranean food for good reason. It’s packed with healthy fats that can help lower inflammation and the risk of heart disease. 

  • Garlic – I use fresh garlic in this recipe because it just gives it a ton of flavor. Using a garlic press makes the task of mincing garlic significantly easier too! You can substitute pre-minced garlic too if that’s easier for you.

  • Spices – to bring out those Greek flavors, you’ll combine a pinch of salt, black pepper, oregano, dried basil, honey, and paprika. 

  • Chicken breasts – of course, you’ll need chicken for the Greek chicken bowls! I use boneless skinless chicken breast because it’s a great lean protein source. You could also substitute boneless skinless chicken thighs too.

For the grain bowls: 

  • Cooked quinoa – this natural whole grain is rich in both fiber and plant based protein. One cup of quinoa has 5 grams of fiber and 8 grams of protein…which is pretty impressive for a grain!

  • Grape tomatoes – you can use either grape tomatoes or cherry tomatoes in this recipe. I usually use grape tomatoes since they’re the perfect size to cut into quarters using this nifty grape cutter – seriously, it saves so much time! 

  • Red onion – onion provides prebiotic fiber and a crisp texture and flavor to this Mediterranean chicken quinoa bowl. 

  • Cucumber – a staple in Greek food, cucumbers give a nice crunch to this dish. 

  • Olives – I use kalamata olives in this recipe. If you prefer a different type of olive, you could substitute those. 

  • Feta cheese – as a cheese lover, this is one of the best things in this meal if you ask me! It adds a tangy flavor to the bowls. You can substitute goat cheese, parmesan cheese, or a vegan feta cheese if you prefer. 

How To Make Greek Chicken Quinoa Bowls

These Greek chicken quinoa bowls are relatively easy to make. 

First, you’re going to make the marinade for your chicken breast by mixing these ingredients together in a small bowl: lemon juice, olive oil, garlic, oregano, basil, honey, paprika, salt, and pepper.

If needed, pound the chicken breast to be about ½” thick – this helps it to cook more evenly and quickly! Add the chicken and marinade to a ziploc bag or a shallow bowl and allow it to marinate for at least 30 minutes or up to 6 hours.

While the chicken is marinating, prep the quinoa and vegetables. Cook quinoa according to package instructions then set aside. Chop the vegetables and set aside. 

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once the oil is hot, add the chicken to the pan and cook for 5 to 6 minutes on each side. Insert a meat thermometer into the thickest part of the chicken breast; the internal temperature should be 165 degrees Fahrenheit. 

Once cooked through, remove the chicken from the heat to a cutting board and allow to rest for a few minutes before slicing. 

Assemble your bowls with the quinoa, diced veggies, feta cheese, and sliced Greek chicken. Top your Greek chicken quinoa bowls with tzatziki sauce, creamy hummus, fresh parsley, olive oil, or a squeeze of fresh lemon juice. 

My favorite way to enjoy this is with fresh parsley and this tzatziki sauce recipe!

Enjoy this dish immediately or put it into meal prep containers. These store well in an airtight container in the fridge for up to 3 to 4 days. 

Variations + Substitutions

  • Dairy-Free? Replace the feta cheese with a vegan feta cheese or omit entirely.

  • Substitute quinoa for chickpeas, brown rice, wild rice, or farro. 

  • Add more vegetables to the dish by adding chopped red bell pepper or serving this over a bed of greens like spinach or lettuce.

  • At the time of serving, add more fresh flavors like fresh parsley, chickpea hummus, a drizzle of olive oil, or a squeeze of lemon juice, if desired.

  • Serve with tzatziki sauce, a traditional Greek yogurt mixture that goes so well with this dish! This creamy tzatziki recipe is a must try!

Ingredients

Greek Chicken Marinade

  • cup olive oil extra virgin
