French toast was a weekend comfort food in my house growing up. It was a little bit fancier than our typical weekday breakfasts but it was simple and something the whole family loved. 

This french toast in a mug recipe takes things a step further in simplicity. You cook the entire thing in the microwave and you only use one mug. So there’s zero food waste and only one dish to clean. That’s right, no need to dirty up a pan or mixing bowl for this french toast recipe. 

Plus, when you strategically use a high quality bread, you can get about 10 grams of fiber and 17 grams of protein out of this entire recipe. To make it a more filling breakfast, you can easily add some extra protein. Greek yogurt, cottage cheese, a drizzle of nut butter, or these egg bites are all great ways to add some quick protein. 

Ingredients You’ll Need

This french toast in a mug recipe uses simple staple ingredients that you probably already have in your house. Here’s what you’ll need.

  • Egg – you’ll want to use the whole egg for this recipe. The egg yolk is actually where a lot of great nutrition comes from, including choline, selenium, and vitamin D.

  • Milk of choice – I used traditional cow’s milk for this recipe, but you can substitute almond milk or your milk of choice. 

  • Cinnamon – this warm spice adds some great flavor to this recipe. 

  • Maple syrup – french toast wouldn’t be complete without a little hint of maple syrup flavor. 

  • Whole grain bread – I love using Dave’s Killer Bread for this recipe. Skip the thin sliced option – the bigger slice of bread has 5 grams of fiber and 5 grams of protein. This is a great recipe to use up stale bread too! Stale bread actually absorbs the liquid a bit better without getting too soggy. If your bread isn’t stale, you can toast it a tiny bit to dry it out a little bit so that it mimics stale bread.

  • Vanilla extract and a pinch of salt – these are optional but a good addition for more flavor dimension.

How To Make French Toast in a Mug

This french toast in a mug recipe is incredibly simple to make. Here’s how you’re going to do it. 

In a microwave-safe mug, whisk the egg and milk together. Stir in the cinnamon, maple syrup, and optional vanilla extract. 

Cut or rip your bread into small pieces. Add the bread pieces to the egg mixture and stir to combine. If the bread isn’t saturated with the egg mixture, add a splash more milk. Press the bread into an even layer in the bottom of the mug and let it rest for up to 5 minutes. This allows the bread to absorb the egg mixture. 

Microwave for 90 seconds then switch to microwaving in 15 second intervals until the bread along the outer edge is firm to the touch and just moist on top. In my microwave, it takes about 2 minutes to be perfectly cooked. 

Let the french toast mug cake cool slightly then transfer to a plate or a bowl. Add your favorite toppings like Greek yogurt, cottage cheese, peanut butter, maple syrup, fresh berries, banana slices, or chia jam. This is best if enjoyed immediately.

Variations, Substitutions + A Dietitian Expert Tips

  • If your bread is really fresh, toast it slightly so that it becomes a little “dried out”. This mimics stale bread and helps the bread to not get too soggy. 
  • Add a pinch of salt and vanilla extract to enhance the flavor. 
  • Substitute sugar-free maple syrup or another liquid sweetener of choice if you’d prefer to decrease the calorie amount.
  • To make it a more nutritious breakfast, add toppings such as fresh fruit, Greek yogurt, cottage cheese, chia seeds, or add some eggs on the side for more protein. 
  • To make it a more sweet breakfast or dessert, add more maple syrup, chocolate chips, or whipped cream.

Ingredients

  • 1 egg
  • 2 tbsp milk
  • ½ tbsp maple syrup
  • ¼ tsp cinnamon
  • 2 slices whole grain bread cut or ripped into small pieces

Instructions

  • In a microwave-safe mug, whisk the egg and milk together. Stir in the cinnamon and maple syrup.
  • Add the bread to the mug and stir to combine with the egg mixture. If the bread isn’t saturated with the egg mixture, add a splash more milk. Press the bread into an even layer in the bottom of the mug and let it rest for about 5 minutes so the bread can absorb the egg mixture.
  • Microwave for 1 ½ to 2 minutes or until the bread along the outer edge is firm to the touch and just moist on top. *see notes below*
  • Let the mug cake cool slightly then transfer to a plate or a bowl. Top with your favorite toppings such as fresh berries, Greek yogurt, or a drizzle of peanut butter. Enjoy!

Notes

I use Dave’s Killer Bread for this recipe because it’s a higher protein and higher fiber bread option.
If your bread is really fresh, toast it slightly so that it becomes a little “dried out”. This mimics stale bread and helps the bread to not get too soggy. 
Microwave the french toast mug for about 90 seconds then switch to microwaving for 15 second intervals until the outer edge is firm to the touch and just moist on top. In my microwave, it takes about 2 minutes and 15 seconds. The top of the middle should still feel a little more spongy. Be careful not to overcook or the entire cake will be dry.
